Preheat oven to 350℉. Line a baking sheet with parchment paper.
In a food processor, crush the graham crackers until very fine.
½ c graham cracker crumbs
Sift together the dry ingredients as well as the graham cracker crumbs and set them aside.
1 ½ c all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda
Cream together the butter and sugars in the bowl of a stand mixer fitted with a paddle attachment. Add the eggs and vanilla extract. Continue to mix until just combined.
½ c unsalted butter, ½ c granulated sugar, ½ c brown sugar, 1 egg, 2 teaspoon vanilla extract
Add the dry ingredients to the wet ingredients and mix until completely combined. Fold in the chopped Oreos.

Scoop out 3 tablespoons of dough and flatten it in the palm of your hand. Place a marshmallow in the center and form the dough around it. Place on a baking sheet being sure to give the cookies plenty of space to spread. They will spread quite a bit so you will likely only be able to do a few cookies at a time. Bake in the oven for 10 - 12 minutes. Allow the cookies to cool for a few minutes before transferring them to a cooling rack to enjoy!
