Ultimate Espresso Cookies

Ingredients
  

For the Cookies

  • 1 ¾ c all-purpose flour
  • ¾ c cake flour
  • 1 tablespoon espresso powder
  • 1 teaspoon baking soda
  • 4 oz cream cheese softened
  • ¾ c unsalted butter softened
  • ½ c granulated sugar
  • ½ c brown sugar
  • 1 large egg room temperature
  • 3 teaspoon vanilla
  • 1 ½ cup rough chopped java chip oreos plus extra for topping each cookie
  • ½ c white chocolate chips
  • 1 c espresso chips
  • 2 bars cookies and cream Hershey optional

For the Kahlua Glaze

  • 2 tablespoon espresso powder
  • 3 tablespoon boiling water
  • 1 tablespoon kahlua
  • 3 c powdered sugar

Instructions
 

For the Cookies

  • Preheat oven to 350°F. Line baking sheets with parchment paper.
  • In a stand mixer fitted with a paddle attachment, cream together butter, cream cheese and sugars.
    4 oz cream cheese, ¾ c unsalted butter, ½ c granulated sugar, ½ c brown sugar
  • Add egg and vanilla and continue to mix until just combined.
    1 large egg, 3 teaspoon vanilla
  • In separate bowl, combine flours, espresso powder, and baking soda.
    1 ¾ c all-purpose flour, ¾ c cake flour, 1 tablespoon espresso powder, 1 teaspoon baking soda
  • Add flour mixture to wet mixture and mix until just combined.
  • Fold in crushed oreos, white chocolate chips and espresso chips.
    1 ½ cup rough chopped java chip oreos, ½ c white chocolate chips, 1 c espresso chips
  • Scoop out about 3 tablespoon of dough and place on baking sheet lined with parchment paper. Bake for approximately 15 minutes.
  • Remove from the oven and allow to cool a bit before topping with a Java Chip Oreo and a square of Cookies and Cream Hershey.

For the Kahlua Glaze

  • Whisk together espresso powder and boiling water in a bow until the espresso powder is dissolved.
    2 tablespoon espresso powder, 3 tablespoon boiling water
  • Add the Kahlua and mix again.
    1 tablespoon kahlua
  • Slowly whisk in powdered sugar until there are no more lumps present in the glaze. You are welcome to adjust the amount of powdered sugar used to change the thickness of the glaze if desired.
    3 c powdered sugar
  • Using a piping bag or a spoon, drizzle the glaze over the cookies.

Notes

Espresso Powder: While I don't recommend it because there is a difference in flavor, you can substitute instant coffee for the espresso powder. 
Storage: Store these cookies in an airtight container at room temperature for up to 4 days or in the refrigerator for up to a week. You may also freeze them for up to 6 months.
