What is Eggnog?
Eggnog is a common holiday drink with a custard-like flavor profile. It is made with milk, cream, sugar, eggs and nutmeg. While you can find it in most grocery stores around the holidays, you can also make eggnog yourself fairly easily.
The eggnog mixture itself is commonly added to other drinks. Most often, it is added to alcohol such as whiskey, bourbon, or rum but it is also added to espresso or tea at times.
These eggnog latte cookies are inspired by adding the eggnog to espresso to make an eggnog latte. They are packed with a bold, espresso flavor with notes of cinnamon and nutmeg as would be expected of an eggnog latte.

These eggnog cookies are absolutely delightful with the perfect balance of spice and sweet! There are many reasons to love them but here are a few of the top reasons you'll be making these cookies time and time again!
- The dough requires no refrigeration or freezing! I'm always so bummed when I have to spend time waiting for the dough to chill before I get to bake it. Because of that, I decided to make cookies that require no chill time!
- They are a great way to use up leftover eggnog mix! Or you could say that they're a great excuse to break into your eggnog early. Either way, you now have a new use for eggnog! These were great for me because I had leftover eggnog from Thanksgiving and didn't want to throw it away but I also didn't want to make myself a drink. These cookies solved that problem.
- They are very soft! These cookies are pillowy-like and delicious!
Ingredients
Before starting on making these eggnog latte cookies, gather your ingredients.
For the Cookies:
All-Purpose Flour: The flour can be unbleached or bleached flour. Be sure to spoon and level your flour so you get the correct amount!
Baking Powder: Be sure to check the expiration date on your baking powder before you use it!
Cinnamon: This adds warmth to the cookies and I highly recommend that you don't skip this ingredient.
Nutmeg: This is the main spice found in eggnog so it's arguably the most important.
Cloves: This is used in the cookies for the same reason as the cinnamon.
Espresso Powder: You can use instant espresso if you prefer. Espresso powder can usually be found in the baking aisle at your grocery store.
Salt: To help balance out the sweet.
Unsalted Butter: Salted butter will work as well if needed. If you choose to use salted butter, don't add the salt that the recipe calls for. Make sure your butter is room temperature when you use it for this recipe.
Granulated Sugar: To ensure your cookies are sweet!
Brown Sugar: I used light brown sugar for this recipe.
Egg: I used a large egg in this recipe. Let it come to room temperature before using in this recipe.
Vanilla Extract: I recommend pure vanilla extract but imitation vanilla extract works fine too!
Eggnog: I bought my eggnog from the grocery store.
For the Espresso Icing:
Boiling Water: Boil the water to make it easier to dissolve the espresso powder and nutmeg.
Nutmeg: Like I mentioned above, nutmeg is the key spice in eggnog so we are adding a little extra for the icing.
Espresso Powder: This adds more of the bold, coffee flavor that we're looking for.
Powdered Sugar: The glaze needs to be sweet so we add powdered sugar. I recommend sifting your powdered sugar to avoid any lumps.
How to make Eggnog Latte Cookies
These cookies are super easy to make. Here's a step-by-step with photos guide.
Step 1: Preheat oven to 350℉. Line a cookie sheet with parchment paper.
Step 2: In a medium sized bowl, sift together the flour, baking powder, cinnamon, nutmeg, cloves, espresso powder, and salt.
Step 3: In the bowl of electric mixer fitted with paddle attachment, cream the butter and sugars together.
Step 4: Add the egg, vanilla, and eggnog. Continue mixing until smooth.
Step 5: Slowly add the dry ingredients to the wet ingredients and mix until just combined.
Step 6: Scoop out a rounded tablespoon of cookie dough and roll into a ball. Place on a parchment paper lined baking sheet and bake for 8 - 10 minutes. Remove from the oven and allow to cool for a few minutes before transferring to a cooling rack to cool completely.
Step 7: Bring water to a boil. In a medium sized bowl, combine boiling water, espresso powder and nutmeg. Whisk until smooth.
Step 8: Sift in the powdered sugar and continue whisking until well combined.
Step 9: Drizzle the top of the cookies with the icing and enjoy!
Tips for the Perfect Cookies
These are cookies are relatively easy to make but here are a few tips to help you ensure success!
- Let your ingredients come to room temperature. Cold ingredients don't blend together very well and using cold ingredients can lead to your final cookie's texture being off.
- Spoon and level your flour. Never pack it. The correct way to measure flour is by fluffing it up to spoon it into your measuring cup and then leveling it off. If you pack your flour in your measuring cup, you will end up with too much and have a dense cookie.
- Sift your powdered sugar when making your icing. While this isn't required, it does greatly reduce your chance of having powdered sugar lumps in your icing.
- Use piping bags or plastic sandwich bags to dispense your icing on your cookies. I chose to use a spoon simply because I thought that the photos for the process shots would look better. However, I quickly regretted it and wished that I would've use a piping bag like I normally do. It's so much easier to get aesthetic cookies when doing this and it really doesn't add any time!

Eggnog Latte Cookies
Ingredients
For the Cookies:
- 2 ¼ c All-Purpose Flour
- 1 teaspoon Baking Powder
- ½ teaspoon Cinnamon
- ½ teaspoon Nutmeg

- 2 teaspoon Espresso Powder
