Introducing my delicious S'moreo Cookies! Who doesn't love the classic combination of gooey marshmallows, rich chocolate, and crispy graham crackers? The nostalgia-inducing taste of s'mores has been a beloved treat for generations, and now, it's getting a delightful twist with the introduction of Oreo Cookies! These cookies are comprised of graham cracker cookies with bits of Oreo folded in. To finish things off, a marshmallow is stuffed in the center for that ooey-gooey smore texture we all know and love!

Why You'll Love These Cookies

These cookies are nothing short of delicious! Here are a few reasons that you will absolutely love them!

  • The texture is divine! Imagine this, a soft, melt in your mouth cookie withe crunchy pieces of Oreo and gooey marshmallow! Is your mouth watering right now? Because I know mine is!
  • They're easy to make! These cookies are easy to make and require no chill time! They are straightforward and take very little time!
  • They're nostalgic! I don't know about you but I grew up eating a lot of Oreos and a lot of s'mores! These cookies are a double whammy of nostalgia!

Ingredients

Butter: I recommend using unsalted butter for this recipe. However, you can also use salted butter if needed.

Sugars: This recipe calls for equal parts granulated sugar and light brown sugar to get the perfect level of sweetness!

Egg: Allow your egg to come to room temperature before making the dough for the cookies.

Vanilla Extract: I recommend using pure vanilla extract but you may also use vanilla bean paste.

All Purpose Flour: You may use bleached or unbleached flour for this recipe. Be sure to properly measure your flour!

Graham Crackers: I used the store brand honey graham crackers but feel free experiment using chocolate or cinnamon graham crackers.

Leaveners: Every good cookie needs leaveners and I think this is the perfect ratio of baking powder to baking soda!

Oreos: I used standard Oreos so I could get more chocolate cookie and less filling since I was mixing it into cookie dough. However, you can use double stuff or experiment with other flavors of Oreos!

Marshmallows: I used standard-sized marshmallows but note that these cookies are pretty large so if you decide to make smaller ones you will want to use mini marshmallows or cut the full-sized marshmallows into smaller pieces.

How to Make S'moreo Cookies

Step 1: Preheat oven to 350℉. Line a baking sheet with parchment paper.

Step 2: In a food processor, crush the graham crackers until very fine.

Step 3: Sift together the 1 ½ cups all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon baking soda as well as the ½ cup of graham cracker crumbs and set them aside.

Dry ingredients in a bowl before and after being sifted together.

Step 4: Cream together the ½ cup butter, ½ cup granulated sugar, and ½ cup brown sugar in the bowl of a stand mixer fitted with a paddle attachment. Add the egg and 2 teaspoons of vanilla extract. Continue to mix until just combined.

Step 5: Add the dry ingredients to the wet ingredients and mix until completely combined. Fold in the 1 cup of chopped Oreos.

Step 6: Scoop out 3 tablespoons of dough and flatten it in the palm of your hand. Place a marshmallow in the center and form the dough around it. Place on a baking sheet being sure to give the cookies plenty of space to spread. They will spread quite a bit so you will likely only be able to do a few cookies at a time. Bake in the oven for 10 - 12 minutes. Allow the cookies to cool for a few minutes before transferring them to a cooling rack to enjoy!

Tips for Success

To make this recipe as perfect as possible, here are a few tips and tricks!

  • Don't pack your measuring cup with flour! This will result in a dense cookie with too much flour. Instead, spoon the flour into your measuring cup before you level it off.
  • Allow your ingredients to come to room temperature so they completely mix together and you get an even texture in your cookie.
  • Process your graham cracker completely so it is fine and similar to flour in texture. Once again, this keeps everything even when mixing.

Frequently Asked Questions

Can I make these cookies smaller?

Yes! You can scoop out 1 tablespoon of dough instead of 3. If you do this then you will either want to use mini marshmallows or cut the regular sized ones into fourths. Reduce the baking time to 8-10 minutes.

What is the best way to store these cookies?

Store in an airtight container at room temperature for up to 5 days.

Ingredients
  

  • ½ c unsalted butter room temperature

Crushing the Graham Crackers: If you don't have a food processor, you can also place the graham crackers in a Ziplock bag and crush them using a rolling pin or the back of a spoon.
