To be honest, these cookies are a bit nostalgic for me so when I decided to develop a recipe for them, I wanted to get them perfect! Back when I was in college, I lived near the downtown farmers market which had a local tea shop right next to it. Almost every Saturday, I would get up in the morning and walk down to the farmers market. On my way, I would stop into that local tea shop and get a coconut chai tea latte and take it with me to walk around the market. I've been drinking coconut chai tea lattes ever since and wanted to turn it into a cookie. Behold, my coconut chai cookies!

What is Chai?
Chai is actually another word for tea in Hindi and is extremely popular across India. The most common form is masala chai which is a black tea with spices such as cardamom, ginger, cinnamon, nutmeg, cloves and pepper; the most prominent spice being cardamom. Chai tea can be found in most grocery stores in a variety of forms. You can find chai tea bags or a chai tea concentrate. You can even find chai spice syrup to make a dirty chai tea latte at home. Over the years, chai has became more and more popular and is now a popular flavor used in baked goods!

These cookies are absolutely amazing! Coconut Chai is one of my favorite flavor combinations and I hope you love it too! Here are a few reasons why you'll fall in love with these tasty cookies!

Ingredients
Before we make these delicious cookies, let's start by gathering our ingredients!
Unsalted Butter: Make sure your butter is softened to room temperature. Salted butter will work as well if needed.
Granulated Sugar and Brown Sugar: Equal parts granulated sugar and brown sugar make the best texture for these cookies. I used light brown sugar for this recipe.
Egg: Use a large sized egg and let it come to room temperature before using it.
Vanilla Extract: I always recommend pure vanilla extract but imitation vanilla works well too!
All-Purpose Flour: Unbleached or bleached works fine for this recipe. Be sure to measure your flour correctly by spooning and leveling it into your measuring cup!
Baking Powder and Baking Soda: All cookies need some leveling agents. This combination of both results in the perfect cookie texture!
Chai Spice: Chai spice is typically a mixture of cardamom, cinnamon, ginger, nutmeg, cloves, and pepper. You can buy chai spice or make your own chai spice!
Shredded Coconut: I used sweetened shredded coconut and bought it at the grocery store.
How to Make Coconut Chai Cookies
Making these cookies is pretty quick and easy. Here's a step-by-step breakdown of how to do it with pictures!
Step 1: Preheat oven to 350℉. Line a baking sheet with parchment paper.
Step 2: In a medium sized bowl, sift together the flour, baking powder, baking soda, and chai spice.
Step 3: In the bowl of a stand mixer fitted with a paddle attachment, cream together the butter and sugars.
Step 4: Add the egg and vanilla, continuing to mix until well combined.
Step 5: Slowly add in the dry ingredients, continuing to mix until just combined. Fold in the coconut.
Step 6: Scoop out rounded tablespoons of cookie dough and roll into a ball. Roll in the extra coconut to coat the outside. Place on a cookie sheet a couple inches apart to allow room to spread and bake in the oven for 8-10 minutes. Allow to cool slightly before transferring the cookies to a cooling rack.
Tips for the Perfect Cookies
These cookies are relatively easy to make but here are a few tips to make sure you're successful making these delicious cookies.
Spoon and level your flour! You should never pack flour into a measure cup. If you do, you will get a dense cookie and it won't be near as good. To spoon and level flour, start by fluffing up your flour before spooning it into your measuring cup and then leveling it off.
Let your ingredients come to room temperature! When ingredients are too cold, they don't blend together very well. Having all of your ingredients at room temperature allows them to combine seamlessly and in turn, gets you the best texture for your cookies.
