Preheat oven to 225℉ and line a baking sheet with parchment paper.
Melt the coconut oil in the microwave in 15 second increments until it is completely melted.
Mix together all ingredients in a mixing bowl until smooth.
Pour the mixture onto the cookie sheet lined with parchment paper and press into a flat, even layer about ¼ inch thick. Bake in the oven for 20-25 minutes.
Allow to cool completely before cutting into small pieces to be used in your baking recipes.

This recipe makes 1 ½ cups of cinnamon baking chips.
