Cookie Monster Ice Cream

Anyone else love cookies so much that they sometimes wonder if they're The Cookie Monster in real life?...because same! That's why I decided that I needed to create Cookie Monster Ice Cream! It combines two of my absolute favorite things, cookies and ice cream! Typically when I think of cookie monster themed goods, they only have Oreos and Chips Ahoy Cookies. That wasn't quite good enough for me so I decided that I needed to add Nutter Butters too. Let's face it, your girl is a major peanut butter lover so I'll take the opportunity to add peanut butter to just about anything!

About the Ice Cream Base

This Cookie Monster Ice Cream is a custard base. There is a wide variety of ice cream bases but I like a custard base because of its richness. It also has a really high fat percentage which makes it nice and THICCCC! (and being THIC is in right now...shout out to the Kardashians!) In all seriousness, custard bases are made with egg yolks and have to be cooked. The advantages to this is the result of a rich and thick ice cream base. However, the disadvantage is the added time to cook and cool the ice cream base before you are able to churn it. I think it's worth the extra time though!

A Few Notes:

This Cookie Monster Ice Cream is pretty simple to make but a few notes to set you up for success:

  1. Due to the egg yolks in the recipe, the base will have a yellow color to it. If you plan to make this ice cream blue, it will likely take a bit more food color than you originally thought. When I first added my food coloring, it turned the ice cream green and I had to add more after I had refrigerated the base.
  2. It is important not to skip the step of straining the ice cream! There will be a few chunks in the custard base that you do not want in the actual ice cream. Please do not skip this step!
  3. Planning for this ice cream is key. Since it is a custard base, it is helpful to make the base the day before you plan to churn it. Ensure you plan properly to allow the ice cream base to cool before churning it.

Cookie Monster Ice Cream

The cookie monster ice cream will transport you back to childhood! It is a vanilla custard base ice cream with Oreos, Chips Ahoy, and Nutter Butter Cookies. Make it truly cookie monster themed by adding some blue food coloring and you'll turn into The Cookie Monster in no time! Give it a try and be sure to tag @andees_apron on Instagram!

Ingredients
  

  • 2 c heavy whipping cream
  • 1 c whole milk
  • ½ c granulated sugar
  • 6 large egg yolks
  • 2 tablespoon vanilla extract
  • 5-10 Oreos *
  • 5-10 Chips Ahoy *
  • 5-10 Nutter Butters *
  • a few drops blue food coloring

Instructions
 

  • Bring heavy cream, milk, and granulated sugar to a simmer in a medium saucepan.
    2 c heavy whipping cream, 1 c whole milk, ½ c granulated sugar
  • In a separate bowl, divide egg whites and egg yolks. Whisk egg yolks and discard the egg whites.
    6 large egg yolks
  • Slowly whisk half of cream into the yolks then dump into the saucepan with remaining cream. Continue whisking on medium-low until the mixture is thick enough that is starts to coat the sides of the saucepan. (about 170°F)
  • Remove mixture from heat and strain through fine mesh strainer into a bowl. Add vanilla and food coloring and whisk to combine. Cool to room temperature before covering to chill for at least 4 hours or overnight.
    2 tablespoon vanilla extract, a few drops blue food coloring
  • Once the mixture is well chilled, churn in your ice cream maker according to directions. (My ice cream maker requires churning for about 30 minutes.)
  • When the ice cream is the consistency that you like, add in the cookies by either chopping them into small pieces or breaking them apart with your hands. These can either be churned into your ice cream or folded in with a spatula.
    5-10 Oreos, 5-10 Chips Ahoy, 5-10 Nutter Butters
  • Dump ice cream into a container and place in the freezer.
  • Optional: Sprinkle the top of the ice cream with extra Oreos, Chips Ahoy, and Nutter Butters in order to make it look pretty!

Notes

* I used 7 of each type of cookie for this recipe and it tasted great!
