Cookie Breakdown
These ultimate espresso cookies are dynamic and would give the big cookie companies like Crumbl a run for their money. This cookie is espresso cookie dough with crushed Java Chip Oreos, white chocolate chips, and espresso chips mixed into the dough. The cookies are baked and then topped with a whole Java Chip Oreo and a Hershey’s Cookies and Cream Chocolate Square. To finish things off, they are topped with a Kahlua Espresso Glaze. Wow! I bet your mouth is watering now. I know mine is!
Ingredients
Before making these delicious cookies, start by gathering the ingredients.
For the Espresso Cookies:
- All-Purpose Flour: I used unbleached flour for this recipe but you can use bleached flour or substitute with gluten free flour.
- Cake Flour: This gives the cookies a lighter, softer texture. If you don't have cake flour, you can substitute by using cornstarch. For each 1 cup of flour, remove 2 tablespoons and then add 2 tablespoons of cornstarch to get 1 cup of cake flour. If you don't have cornstarch, you can just use normal flour. It will change the texture but it will still be delicious!
- Espresso Powder: You can find this in the baking aisle at most grocery stores. I recommend that you make this a pantry staple if it's not already.
- Baking Soda: Double check that this hasn't expired.
- Cream Cheese: This is more for texture than taste. Make sure it's room temperature so it combines nicely with the other ingredients.
- Unsalted Butter: I recommend using unsalted butter but you can use salted butter if desired. This needs to be room temperature to ensure that it combines well with the other ingredients and that you get the best textured cookie possible.
- Granulated Sugar: For sweetness.
- Brown Sugar: For extra sweetness. Make sure this is packed when you measure it.
- Egg: This is a binder for the cookies. Let it get to room temperature before mixing with the other ingredients.
- Vanilla: I recommend using pure vanilla extract but you can substitute for imitation vanilla extract if you need to.
- Java Chip Oreos: For extra espresso flavor. These can usually be found at your grocery store.
- White Chocolate Chips: These add some extra sweetness to the cookies and balance out the espresso chips.
- Espresso Chips: I said that these are the ultimate espresso cookies. Espresso chips for more espresso flavor.
- Hershey’s Cookies and Cream Chocolate Bar: This is for display more than anything but it tastes delicious!
For the Kahlua Espresso Glaze (Optional, but recommended):
- Espresso Powder: Like I said above, this can be found in the baking aisle in most grocery stores.
- Boiling Water: Ensure that you use hot water when making this. Hot water dissolves the espresso powder much better than room temperature or cold water.
- Kahlua: Coffee and Kahlua is delicious together! If you want something without alcohol you can substitute for coffee or simply add more boiling water.
- Powdered Sugar: This is what makes the glaze sweet and delicious! I recommend sifting your powdered sugar to avoid getting lumps in your glaze.
How to Make the Ultimate Espresso Cookies
Step 1: Preheat oven to 350°F. Line a baking sheet with parchment paper.
Step 2: In a stand mixer fitted with a paddle attachment, cream together butter, cream cheese and sugars. Be sure not to over-cream these ingredients (more details below).
Step 3: Add egg and vanilla and continue to mix until just combined.
Step 4: In separate bowl, combine flours, espresso powder, and baking soda. Mix together.
Step 5: Add flour mixture to wet mixture and mix until just combined.
Step 6: Fold in crushed Oreos, white chocolate chips and espresso chips.
Step 7: Scoop out about 3 tablespoon of dough and place on baking sheet lined with parchment paper. Bake for approximately 15 minutes.
Step 8: Remove from the oven and allow to cool a bit before topping with a Java Chip Oreo and a square of Cookies and Cream Hershey. If you add the Hershey square while the cookies are still hot, it will melt into the cookie and may make a bit of a mess.
Step 9: Whisk together espresso powder and boiling water in a bowl until the espresso powder is dissolved.
Step 10: Add the Kahlua and mix again.
Step 11: Slowly whisk in powdered sugar until there are no more lumps present in the glaze. You are welcome to adjust the amount of powdered sugar used to change the thickness of the glaze if desired.
Step 12: Using a piping bag or a spoon, drizzle the glaze over the cookies.
Tips for the Perfect Cookies
Luckily, these cookies are pretty fail-proof but here are a few tips and tricks to ensure your success making them!
- Don't under-cream or over-cream your butter and sugars. A good rule of thumb is to cream together for about 3 minutes. Handle the heat has great information on creaming butter and sugar together. This recipe also has cream cheese in it so it is slightly different but the concept is still the same.
- Measure your flour correctly. Never pack flour into a measuring cup. It's important to fluff it up and then spoon and level it.
- Let your ingredients come to room temperature. If ingredients are too cold they will not come together well and the texture of your cookies will be affected.
Frequently Asked Questions
Yes. While I don't recommend it because there is a difference in flavor, you can substitute instant coffee for the espresso powder. However, once I bought espresso powder and started baking with it, I added it a bunch of things and never found myself letting it go to waste so I would recommend investing in the espresso powder!
Store these cookies in an airtight container at room temperature for up to 4 days or in the refrigerator for up to a week. You may also freeze them for up to 6 months.
You can make the dough ahead of time and store in the refrigerator for 2 days or in the freezer for up to 6 months.
